Lagers are a mix of the new and old world.

Lager beer owes its origins to a remarkable yeast hybrid: Saccharomyces pastorianus, born in Bavaria during the 15th–16th centuries when European ale yeast met a cold-loving wild strain, S. eubayanus, thought to have traveled from distant Patagonia via early trade routes.

By the 19th century, innovations like refrigeration carried lager across the globe, cementing it as the world’s most popular beer style.
